Optical manipulation of atoms and molecules embarks an exploration into novel quantum phenomena and quantum information processing. New tools to precisely control atomic interactions have led to emulation of complex quantum systems in nature. I will outline the basics of quantum control of cold atoms, as well as quantum simulation experiments relevant to cosmological models. Finally I will introduce our new experiments to gain full control of individual atoms toward a scalable quantum simulation platform.
